Most traditional blini use a yeast-raised batter. This means the batter sits to rise before it is cooked. You can mix the batter with milk or even boiling water. When you use boiling water, they are called zavarnye bliny. People use different kinds of flour to make them. Wheat flour is the most popular choice today. However, many people still use buckwheat, oatmeal, or millet flour. You can even mix grated apple or potato right into the batter.

Blini have a very old history dating back to the Middle Ages.

In the past, people cooked them in a large Russian oven. This oven was called a pech. Even though people use frying pans now, they still say they are "baking" the blini. There are many special times for eating them. For example, people eat them during Maslenitsa, which is called butter week. This is a time to celebrate the end of winter. Blini are also eaten during funerals or special prayers.
