Pectin is a special substance found in many living things. It is a large molecule called a heteropolysaccharide. This means it is made of different kinds of sugar parts joined together.

You can find pectin in the cell walls of land plants. It also sits in the middle lamella, which is the space that binds cells together. This helps plants stay strong and grow. Pectin is very important for how plants function every day.

There are many ways pectin works inside a plant. Tiny parts called vesicles carry pectin to the cell wall. This happens through a process called exocytosis.

Pectin helps the cell walls stretch so the plant can grow. As fruit ripens, the pectin begins to break down. Special tools called enzymes, like pectinase, do this job. This breakdown makes the fruit feel much softer. It also lets the cells separate from one another.

A scientist named Henri Braconnot studied pectin long ago. He isolated and described its main part in 1825. That main part is a sugar acid called galacturonic acid.

Today, we make pectin as a white or light-brown powder. We get it from many different fruits. Citrus peels have a huge amount at 30 percent. Apples have about 1 to 1.5 percent. Carrots contain about 1.4 percent of pectin.

People use pectin in many helpful ways. It is a gelling agent, which means it turns liquids into gels. You can find it in jams, jellies, and dessert fillings. It is also used in medicines and sweets.

Pectin is a type of soluble dietary fiber. When you eat it, it can help lower LDL cholesterol. It also slows down how your body takes in sugar. In your large intestine, tiny microorganisms break it down. This process creates short-chain fatty acids that are good for you.

You can see pectin working in your kitchen right now. If you make jelly, pectin is what makes it thick.

It works differently depending on its structure. Some types need high sugar and acid to form a gel. Other types, called low-methoxy pectins, need calcium to work. This is like building a bridge with tiny pieces. The calcium acts like a link between the pectin chains. This creates a strong, three-dimensional net that holds everything together.
