Many spices go into the pot. People often use ginger, cardamom, or cinnamon. Some recipes also use cloves or lemongrass.

To make it, you simmer spices in water first. Then you add the tea leaves to brew. After that, you stir in milk or cream. In India, many people use milk from water buffaloes.

In other places, people use cow's milk.

In India, you can find tea sellers on many streets. These sellers are called chaiwalas. They might carry cups in a wooden frame. In the city of Mumbai, they serve "cutting chai." This is a small cup that is half the usual size. This drink is now popular all over the world. You can find it in many coffee shops. Some people even add espresso to it. They call that a dirty chai.
