This means they choose specific fish to breed together. In the 1800s, farmers in Japan crossed different colored fish. They might cross a red fish with a white fish. This helped them create new patterns and colors. It is a very hard job to do this well. Today, less than 1% of new fish are top-quality colors.

Carp were originally used for food in China and Europe. In ancient China, people even called them "horses." They thought these fish could run through the sky. In Japan, fossils show carp lived there thousands of years ago.

Some old books say an Emperor released carp into a pond to watch. For a long time, people only raised them to eat. It took many years to turn them into ornamental fish.

Most modern koi come from the Niigata area in Japan.

Systematic breeding began there in the 1820s. Farmers in the Nijūmuragō area were the first to do this. They raised fish in ponds near their rice paddies. One famous group is called the Gosanke. It includes the Kōhaku, Taishō Sanshoku, and Shōwa Sanshoku varieties.
