John Yudkin was a famous British scientist who studied nutrition. Nutrition is the study of how the food we eat affects our bodies. He was a professor at Queen Elizabeth College in London. He even helped start the first department in Europe to teach nutrition as a special degree.

This department taught students about many things. They studied biology, chemistry, and physics. They also looked at how money and society affect what people eat. Yudkin believed that food was not just about biology. He saw that it was also tied to how people lived and worked.

Much of Yudkin's work focused on how the body uses different foods. He studied how vitamins help people stay healthy. During the Second World War, he worked in Sierra Leone. He studied a skin disease that many soldiers had. He found the sickness was not an infection. Instead, it was caused by a lack of a vitamin called riboflavin. The soldiers did not eat enough of it because they did not like the millet they were given.

This showed him that even if food is healthy, people must be able to eat it.

John Yudkin is best known for his research on sugar. He studied sucrose, which is a type of sugar made of fructose and glucose. In 1972, he wrote a very famous book called "Pure, White and Deadly." He warned that eating too much sugar could be dangerous. He believed sugar was linked to heart attacks and obesity. He also said it could cause tooth decay and diabetes.

He argued that sugar was different from starch. He showed that the body handles them in different ways.

His ideas were not always popular with other scientists. Some experts thought sugar and starch were processed the same way. Others thought that fat was the main cause of heart disease. Some even thought sugar use was linked to smoking. This made it hard for people to accept his findings at first. However, Yudkin kept using his research to prove his points. He studied how sugar affects insulin, which is something the body uses to manage food.

Today, many people look at Yudkin's work with new interest. In 2009, a video about sugar helped bring his ideas back to light. People are now very concerned about obesity and other health issues. His book was even republished in 2012 with a new introduction. His life shows us how one person's curiosity can change how we think. We can see his impact in the way we study healthy eating today.
