language culture Maturity 5-7 Next article →

Horse meat is a food used in many culinary traditions. It is especially popular in parts of Europe and Asia. Many people find the meat to be quite delicious. It has a slightly sweet taste that reminds people of beef. Because it is very lean, it has very little fat. Some people say it is hard to tell the difference between horse and beef.

You can use horse meat in almost any recipe. It can replace beef, pork, mutton, or even venison. Younger horses usually provide meat that is lighter in color. Older horses produce a meat with a richer color and flavor.

In many places, the way meat is prepared follows a specific way. In large countries, horses are often processed in big factories called abattoirs. In these places, they use a tool called a captive bolt gun. In other countries, the process is much smaller. There, animals might be slaughtered individually outdoors near a village. This happens right when the meat is needed for eating.

In the high Andes mountains, people use the sun to dry the meat. This creates a special product known as charqui.

Humans have a very long history with horses. For hundreds of thousands of years, early humans hunted wild horses for protein. At the Boxgrove site in England, bones from 500,000 years ago show marks from stone tools. In Germany, the Schöningen site has horse bones found with wooden spears from 300,000 years ago. In China, the Lingjing site shows horse hunting from 125,000 to 90,000 years ago. Later, the first humans in the Americas hunted native horses before they went extinct.

History shows that people often eat horse meat during hard times. During the French Revolution, people ate it to survive. Baron Larrey even advised starving soldiers during Napoleon's campaigns to eat it. In 1870, the Siege of Paris caused a huge meat shortage. During that time, between 65,000 and 70,000 horses were eaten in Paris. Even famous racehorses were sometimes used for food when things were very difficult.

In the United States, horse meat was even considered for hospital food after the war.

Today, horse meat production is a large global industry. In 2018, eight main countries consumed about 4.3 million horses every year. China, Mexico, Russia, Italy, and Kazakhstan were among the biggest consumers in 2005. Most horses are not raised just for meat. Instead, they are often horses that are no longer useful for riding or work. In the UK, laws require an equine passport to track where a horse comes from.
