The name covers a vast range of recipes. Most versions consist of a thick, sweet paste. These pastes are made from ingredients like flour, butter, oil, and sugar. For grain-based halva, cooks begin by toasting flour or cornstarch in oil. This process creates a roux, which is a thick mixture of fat and flour. A sugary syrup is then added to the roux to finish the confection. In semolina-based versions, the grain is toasted in fat like oil or butter. This is followed by mixing in water, milk, or sugar. The specific ratio of these ingredients determines the final consistency.

There are several distinct types of halva defined by their base ingredients.

Sesame-based halva is very common in the Mediterranean and the Balkans. It uses tahini, which is a paste made from sesame seeds, mixed with sugar or honey. This version is often dry and crumbly. Sunflower halva is a popular alternative in the former Soviet Union and Bulgaria. It uses roasted, ground sunflower seeds instead of sesame. In India and Pakistan, grain-based varieties like suji ka halwa use wheat semolina. These can range from moist and clumpy to gelatinous and translucent.

Halva has a deep history rooted in Persia, which is modern-day Iran.

By the 9th century, the term applied to many different kinds of sweets. The first written recipes appeared in the 13th century. These were found in the Arabic cookbook Kitab al-Tabikh and an anonymous book from Al-Andalus. The Ottoman Turks later adopted halva and spread it throughout their empire. This included the development of sesame-based versions. By 1874, a factory for tahini halva was already established in Beirut.

Different regions have developed unique and famous examples of this sweet.
