They are the whole parts of plants like oats, wheat, rye, and barley. Some groats also come from buckwheat seeds. These seeds are called pseudocereals. Groats are very special because they include the whole grain. This means they have the fiber-rich bran and the cereal germ. They also have the endosperm, which is the part usually made by milling.

First, the grain is cleaned and sorted by its type. Workers also sort them by size. Next, the grain is peeled and hulled to remove the outer shell. Some grains go through a machine called a groat cutter. This machine can slice grains into fine, medium, or coarse pieces. After that, a brushing machine removes any leftover bits of the shell. If the groats are cut, they are sorted by size using sieves.

People have used these grains for a very long time.

In North India, people use wheat groats to make dalia. This can be a sweet porridge with milk. It can also be a salty meal with vegetables and spices.

Different cultures have many unique ways to eat groats.

In Yemen, people eat a hot breakfast called harish. They might top this boiled cereal with honey or clarified butter. In Palestine and Syria, this dish is also known as bulgur. Bulgur is made from parboiled and cut durum wheat groats. It is an essential part of Middle Eastern dishes like tabbouleh and mansaf. In England, a traditional meal called groaty pudding is made in the Black Country. This dish uses soaked groats, leeks, onions, beef, and beef stock. It bakes for as long as 16 hours.

Groats can be found in many different forms in your kitchen.

You might see sliced oat groats labeled as steel-cut oats. They are also called pinhead oats or Irish oatmeal. You can even find coarse barley flour made from milled barley groats. Some groats are even used to make sausages like black puddings. Because groats can be hard to chew, many people soak them before cooking. This helps make them much easier to enjoy in soups or porridges.
