These lovely scents come from fragrance compounds. A fragrance compound is a tiny chemical with a pleasant odor. These chemicals are very special because they only affect our sense of smell. This is different from flavors, which affect both taste and smell. Many fragrances are actually mixtures of many different compounds working together. Some come from nature, like fruit or flowers. Others are synthetic, which means they are made by people in a lab.

How do these tiny chemicals reach our noses? For a compound to have a smell, it must be volatile. This means it can travel through the air easily. Once it is in the air, it enters your nose. Inside, the air touches olfactory sensory neurons. Humans have between 6 and 10 million of these neurons. They send signals to the olfactory nerves and then to the olfactory bulbs. Finally, the brain's olfactory cortex tells you what you are smelling.

People have studied these scents for a long time. The technology for fragrances grew with the invention of distillation. This process helps concentrate or separate different parts of a scent. The first single component fragrance was cinnamaldehyde. This was purified to start the fragrance and flavor industries. In the 19th century, scientists purified other scents like vanillin and benzaldehyde. Later, the invention of gas chromatography helped scientists study scents even better. This tool allows researchers to see the tiny traces of aroma in things like wine.

There are many different types of fragrance compounds in our world. Some are called esters, like isoamyl acetate which smells like banana. Other compounds are called terpenes, such as limonene which smells like an orange.

You can also find aromatic compounds like vanillin in vanilla. Some scents are even used for safety. For example, people add smelly compounds to odorless gases like propane. This helps people detect a leak. In 2010, a group called the International Fragrance Association identified over 3,000 chemicals used in fragrances.

Fragrances are part of many things you see every day. They are used in cosmetics to make products smell good. They are also used in the food industry to make snacks more appealing. However, some people find certain fragrances hard to use. A study in the United States found that some people get headaches from scented products. In 2007, a group called the American Contact Dermatitis Society named fragrance the Allergen of the Year. Because of this, scientists and laws work to keep people safe.
