Food safety is a very important science. It is the study of how we handle and store food. This science helps prevent foodborne illness. An illness happens when someone eats bad food. If many people get sick from the same food, it is called an outbreak.

We must keep food safe from the factory to the kitchen. This helps protect everyone from getting sick. Scientists work hard to make sure our meals are healthy.

Food can become dirty in three main ways. This is called contamination. Physical contamination happens when objects like hair or metal fall into food. Chemical contamination happens from things like pesticides or cleaning liquids. Biological contamination is when tiny living things like bacteria or viruses get in.

Bacteria are the most common cause of food poisoning. They grow well in a warm area called the danger zone. This zone is between 5°C and 60°C.

Experts have studied these dangers for a long time. The WHO Foodborne Disease Epidemiology Reference Group led a huge study. Over 60 experts worked on this for ten years. They looked at how foodborne diseases affect the whole world.

In 2010, they found that 31 major hazards caused many deaths. This study is the most complete guide we have. It helps leaders understand how to keep people safe.

There are many important numbers to know about food safety. In the United States, about 5,000 people died from these germs in 1999. The WHO estimated 600 million people got sick in 2010. That same year, about 420,000 people died from foodborne illness.

In April 2018, an E. coli outbreak hit 26 US states. This happened because of lettuce from Yuma, Arizona. At least 14 people in that outbreak had kidney failure.

You can help keep food safe at home. Always wash your hands after touching raw meat. Keep raw foods away from foods that are already cooked. You should also use a fridge that stays at 4.4°C or below. A freezer should be at -17.7°C or lower.
