Because fish are highly perishable, they can spoil very quickly. This means they must be handled carefully to keep them fresh and safe to eat. Processing can be a simple job or a very large industry. Large companies often own their own fishing fleets or fish farms. These companies sell their products to grocery stores or other sellers.

There are many different ways to process fish. One way is called fish handling, which is the first step for raw fish. This includes sorting the catch and cleaning it by bleeding or gutting.

Another way is primary processing, where fish are filleted and frozen. Secondary processing is used to make things like canned or chilled products. Some people even make ready-to-eat fish that needs no preparation at all. Each step helps make sure the fish stays in good condition.

Humans have been processing fish for a very long time. Evidence shows people have done this since the early Holocene period.

In the past, people used simple methods to keep food from spoiling. For thousands of years, people in China used aquaculture to keep carp alive. This means they raised the fish in water to keep them fresh. Today, processing is done by many different people. It happens on small fishing boats or in huge processing plants.

Keeping fish cold is one of the best ways to stop spoilage.

People use refrigeration to drop temperatures to about 0 °C. They can also freeze fish at temperatures below -18 °C. Some use ice, like crushed ice or even slurry ice. Slurry ice is a mix of ice crystals and salt that flows like water. This helps cool the fish very fast without causing freeze burns. Modern shipping containers can even control the air to keep fish cold while they travel.

Other methods help control the bacteria that cause bad smells and flavors.

People can use drying, salting, or smoking to remove moisture. This is called controlling water activity. Some use heat, like microwave heating, to kill bacteria. Others use chemical ways, like adding acids or using vacuum packing to remove oxygen. Often, workers use more than one method at the same time. Using many methods together helps keep the fish nutritious and delicious for a long time.
