Fish and chips is a hot, savory dish consisting of battered and fried fish served alongside fried potato chips. Often regarded as the national dish of the United Kingdom, it is a staple of working-class culture. Today, it is a common takeaway food in many English-speaking and Commonwealth nations.

The meal represents a significant culinary tradition that provides comfort to many people. It is enjoyed as a quick meal from a shop or a more formal dining experience in certain settings.

The preparation of the dish involves specific culinary techniques to achieve its characteristic texture. First, the fish is coated in a batter, which is a mixture of flour and water. This batter protects the fish while it undergoes the frying process in hot oil.

Simultaneously, potato slices or pieces, known as chips, are deep-fried until they are cooked. Historically, fish-and-chip shops used large cauldrons of cooking fat heated by coal fires.

Modern shops have evolved into standardized formats where customers queue at a counter to receive their food in paper wrappings.

There are various ways the meal has been served and categorized throughout history. While many know it as a takeaway, entrepreneur Samuel Isaacs introduced the concept of a sit-down fish restaurant in 1896. His restaurants in London and seaside resorts offered a more upmarket experience with tablecloths, china, and cutlery.

He even used a trademark phrase, "This is the Plaice," to brand his business. In other regions, like Scotland, the dish is often paired with "chippy sauce," a mixture of Gold Star brown sauce and malt vinegar.

The origins of the dish are a blend of immigrant traditions and industrial developments. The practice of eating fried fish was introduced to the UK by Spanish and Portuguese Jews living in the Netherlands. These immigrants arrived as early as the 16th century, with a large group settling in London during the 1850s. They prepared fish in a style similar to pescado frito, which involves coating fish in flour before frying.

The modern combination of fish and chips likely emerged in the 1860s. Joseph Malin opened a recorded shop in Bow, East London, around 1860, while John Lees opened one in Mossley, Lancashire, in 1863.

Industrialization played a vital role in making fish and chips a widespread food. The rapid development of trawl fishing in the North Sea provided a steady supply of fish. Additionally, the expansion of the railway system allowed fresh fish to be transported quickly from ports to major industrial cities.

This accessibility made the meal a stock food for the working class. The popularity of the dish is reflected in historical numbers. By 1910, the UK had over 25,000 shops, and this rose to over 35,000 by the 1930s. Although the number of shops decreased to approximately 10,000 by 2009, its cultural significance remained high.

During the First and Second World Wars, the British government prioritized the supply of fish and chips. It was one of the few foods in the United Kingdom not subject to wartime rationing. This helped maintain morale on the home front. Winston Churchill even referred to the meal as "the good companions."

The scale of the industry was immense; for example, Harry Ramsden's shop in West Yorkshire served 10,000 portions in a single day in 1952, a feat recorded in the Guinness Book of Records.

Fish and chips has since become a global phenomenon with distinct regional variations. In Australia, there are an estimated 4,000 shops, with the first recorded owner being Greek migrant Athanasias Comino in 1879.

In Canada, the dish is a popular pub meal, particularly in the Atlantic provinces where Atlantic cod is often used.

In Ireland, the tradition was spread by Giuseppe Cervi, who sold the meal from a handcart. His wife's habit of asking for "one of this, one of that" led to the Dublin phrase "one and one" to describe the meal.
