In Egypt, cooks often use fava beans to make the mix. In the Levant, they usually use chickpeas or a mix of both. To keep the falafel from falling apart, the chickpeas are soaked overnight instead of being cooked first.

After soaking, the beans are ground up with tasty things like garlic, parsley, and scallions. Spices like cumin and coriander add even more flavor. The mixture is shaped into balls by hand or with a tool called an aleb falafel. Finally, the pieces are deep-fried until they are crunchy on the outside.

No one knows exactly who first made falafel.

It most likely began in Egypt. Some people think its history might go back to the time of the Pharaohs. However, the first written records of falafel in Egypt are from the 1800s. Since Alexandria is a busy port city, the food likely traveled from there. It moved north to the Levant region, where the recipe changed to use chickpeas. This helped the dish spread across the whole Middle East.

Falafel has many different roles in different cultures.

In Egypt and Sudan, it is sometimes called ta'ameya. In the 1950s, Jewish Yemeni immigrants helped make the pita sandwich popular. A newspaper from 1939 even mentioned falafel as a street food in a pita. Today, it is a very common meal for many people. It is eaten during Ramadan to break the daily fast. It is also part of the Lenten diet for Arab Christians. Some people even call it a national dish in Israel.

Today, you can find falafel in many different places.

It moved into Europe through migration, especially in Germany. In North America, it is now a popular food in many big cities. Many people who do not eat meat, called vegetarians or vegans, love falafel. They use it as a great source of protein. It can even be used to replace meat in recipes like spaghetti and meatballs. Whether it is fried or baked, it remains a favorite dish for many.
