At first, scientists thought any food with enough protein and fat was fine. But an experiment with cows showed this was wrong. Some cows grew weak when they ate only one type of grain.

McCollum wanted to find the missing pieces in food. He started a colony of rats to study this. Rats grow fast and are easy to feed.

McCollum worked with a student named Marguerite Davis. They fed rats special diets to see what happened. Some rats stopped growing. To fix this, they added tiny amounts of egg or butter. They found a special substance in those foods. They called it "factor A." Today, we call this vitamin A. This was the first vitamin ever found. McCollum also helped find vitamin B and vitamin D. He believed milk was a very protective food. He also said leafy greens were good for us. His work helped people understand how to eat for health.
