It uses certain foods and tools. People often cook in ways that match their home.

For example, tropical places may use more fruit. Cold places might rely on meat and fish.

Trade also changes how people eat. Long ago, people traded spices like cinnamon and ginger. This brought new tastes to far away lands. Some foods change how they taste when we save them. We might use smoke or salt to keep food for winter.

Religion can also shape a cuisine. Many people follow food rules based on their beliefs. In India, some people do not eat meat or eggs. In other places, rules tell people which foods are okay to eat.

New ideas can mix to make new dishes. This is called fusion cuisine. One example is tempura. This is a Japanese dish with fried seafood and vegetables. It grew from mixing old ways of cooking.

Today, chefs even use science to make food in new ways. This is called molecular cuisine.
