It changes its shape depending on how warm it is. Below about 76 degrees Fahrenheit, it looks like a white solid fat. When it gets warmer, it turns into a clear and thin liquid. Unrefined versions of the oil have a very strong coconut smell. People use it for many things, like cooking food or making soap and lotions. It is also used in big factories to make detergents. Some people even use it to help make biodiesel for engines.

There are two main ways to get the oil from the coconut. In the dry process, people take the meat out of the shell first. They dry the meat using fire, the sun, or special kilns to make copra. Then, they press or dissolve the copra to find the oil. In the wet process, people use coconut milk instead of dried meat. In the Philippines, this traditional way of making oil also creates something called latik. Latik is a tasty curd used to decorate Filipino desserts. Modern machines called centrifuges can also help separate the oil from the milk.

Making coconut oil has its own history and many different methods. People have used it for a long time in tropical parts of Asia. In places like Sri Lanka, Thailand, and Kerala, it is a very important part of cooking. Some people make virgin coconut oil, which is called VCO. This oil comes from fresh coconut milk or fresh meat. To make it, people might grate the coconut and mix it with water. They can even let the milk sit for 36 to 48 hours to ferment it.

There are many interesting numbers and facts about how much oil we make. In 2023, the whole world produced about 3.1 million tonnes of coconut oil. The Philippines and Indonesia are the biggest producers, making 59% of the total. To get a good amount of oil, it is important to pick the right coconuts. A coconut might be between 2 and 20 months old when it is picked. If the nuts are too young, the oil is much harder to make. One thousand mature coconuts can produce about 646,000 grams of copra. From that copra, you can get about 131,000 grams of coconut oil.

Even though many people love coconut oil, health experts have some advice. Many groups, like the World Health Organization, suggest eating it in small amounts. This is because the oil has a lot of saturated fat. One type of fat in the oil is called lauric acid. While lauric acid can change your cholesterol levels, it might also increase the risk of heart disease. Some people use a special version called hydrogenated oil. This version has a higher melting point so it stays solid in warm places. This makes it useful for making snacks and non-dairy creamers.
