As a young doctor, she worked in a place called the Gold Coast. This is now the country of Ghana. She saw many children with swollen bellies and thin limbs. She found a new sickness. She called it kwashiorkor. This name came from local words. It means the "disease of the deposed child." Williams found that the children needed more protein in their food. Many other doctors did not believe her at first.

Later, she worked in Malaya. She saw that some companies sold milk to mothers. They said this milk was better than breast milk. Williams knew this was not true. She fought to tell mothers that their own milk was best for babies.

During a war, she was held as a prisoner. She suffered many hard times, but she never stopped caring for others. She later led a group at the World Health Organization. She traveled to many lands to teach people how to care for children. She was a pioneer for child health.
