Making chocolate is a long process that starts with a tree. The cacao tree is a small evergreen that grows near the equator. 
There are many different ways to finish making chocolate. You can make dark chocolate by adding sugar to the cocoa. 

Chocolate has a very long and interesting history. The cacao tree was used as food in Ecuador at least 5,300 years ago. 
Today, the way we make and eat chocolate has changed a lot. In the 1800s, new machines helped people make chocolate in huge amounts. This changed chocolate from a fancy drink for the elite into a food for everyone. Most of the world's cocoa beans now come from West African countries.
Chocolate is a versatile food made from the roasted and ground seeds of the cacao tree. 
The production process begins with the cacao tree, scientifically named *Theobroma cacao*. This name translates to "food of the gods." 
Once harvested, the beans and their surrounding pulp undergo fermentation. 
Next, the nibs are ground to create chocolate liquor. This is unadulterated chocolate in a rough, liquid form. This liquor can be processed to separate it into two main components. These components are cocoa solids and cocoa butter. Cocoa butter is a polymorphic fat that defines the texture and melting point of chocolate. Makers use a machine called a conche to refine the mixture. 
There are several distinct types of chocolate based on their ingredients. Dark chocolate is similar to pure cocoa liquor but usually has more cocoa butter. It is often defined by its specific cocoa percentage. Milk chocolate is made by replacing some cocoa solids with milk solids. White chocolate is unique because it contains cocoa butter and milk solids but no cocoa solids. This gives it an ivory color. 
Chocolate has a history spanning thousands of years. Evidence shows cacao was used in South America at least 5,300 years ago. 
In the modern era, chocolate production has shifted geographically. Today, West African countries produce most of the world's cocoa. Ivory Coast and Ghana alone contribute about 60% of the global supply.
