She was born on June 28, 1819, in Visinada, Istria. This region is known today as part of Croatia. While her parents were not theatrical professionals, she was raised within an opera family. This environment likely influenced her early exposure to the performing arts. Grisi eventually became one of the most versatile dancers of her generation. She was noted for her ability to combine many different technical strengths.

To achieve her level of skill, Grisi underwent rigorous training. She studied at the ballet school of Teatro alla Scala in Milan. Later, she trained under the dancer and balletmaster Jules Perrot. This partnership became very important for her career. Grisi performed choreography by Perrot, which was highly acclaimed at the time. She toured throughout Europe with him. Her performances took her to major cities like London, Paris, Vienna, Munich, and Milan. In these locations, she demonstrated both singing and dancing talents. However, it was her dancing that earned her the most critical praise.

Grisi's career reached a turning point with the ballet Giselle. The world premiere occurred on June 28, 1841, at the Théâtre de l'Académie Royale de Musique in Paris. This was a two-act ballet featuring Grisi in the title role. Other performers included Lucien Petipa, who danced Albrecht, and Adèle Dumilâtre, who played Myrtha, the Queen of the Wilis. The production caused a sensation among the public. Reviewers called it the greatest ballet of its era. It was seen as a successful successor to the Romantic work La Sylphide. This single role established Grisi as a major star in Paris.

Her sudden fame led to significant financial success. In 1841, her salary was 5,000 francs. By 1842, it had risen to 12,000 francs. By 1844, her salary reached 20,000 francs. She also earned additional fees for her performances. Dance historian Lillian Moore noted that Grisi possessed a unique combination of skills. She had the buoyant elevation of Taglioni and the technical virtuosity of Elssler. She also had the mimic powers of Elssler and the exuberant facility of Cerrito. Because she could do so many things well, she was considered more versatile than her peers.

Grisi's career later took her to Russia. In 1850, she joined Perrot in St. Petersburg. He had been appointed as a ballet master there. Grisi performed at the Imperial Bolshoi Kamenny Theatre. Initially, the Russian audience was not enthusiastic about her. They were accustomed to the interpretations of Fanny Elssler. However, the public eventually grew to appreciate Grisi's talents. She served as the prima ballerina of the St. Petersburg Imperial Theatres from 1850 to 1853. During this time, she worked with Joseph Mazilier. He staged several works specifically for her, such as La Jolie Fille de Gand and Vert-Vert.

Throughout her career, Grisi created many important roles. Besides Giselle, she created the dual role of Peri and Leila in the oriental ballet La Péri in 1843. In 1844, she created the title role in Paquita. She also performed in Pas de Quatre in 1845 as the second ballerina. Another notable role was Mazourka in Le Diable à quatre, which she created in 1845. These roles demonstrate the wide range of her artistic capabilities. Her work helped define the classical repertoire of the 19th century.

Grisi retired from the stage in the mid-1850s. After leaving Russia in 1854 with her daughter, Julie-Marie, she moved toward Warsaw. However, she eventually chose to retire at the height of her fame. She settled in Saint-Jean, Geneva, in 1856. She lived at Villa Grisi for the next 46 years. This period of her life was described as a peaceful retirement. Grisi passed away on May 20, 1899, at the age of 79. Her tomb is located in the Cimetière de Châtelaine in Geneva. Her legacy remains tied to the history of Romantic ballet.
