This roll is special because it helped sushi become popular all over the world. It helped people feel comfortable trying new and exotic foods. Today, many sushi chefs use it as a starting point. They create many new kinds of rolls based on this idea. Some people even call it California maki in Japan.

Most California rolls have a few main ingredients inside. These are usually avocado and imitation crab, which is called surimi. Some fancy versions use real crab instead of the imitation kind. Many rolls also include cucumber for a fresh crunch.

In America, the roll is often made as uramaki. This means it is an inside-out roll with rice on the outside. The seaweed, or nori, stays hidden in the middle. Sometimes, chefs sprinkle the outside with sesame seeds or fish eggs like tobiko.

There is a big debate about who first made this roll. Some people believe a chef in Los Angeles named Ken Seusa invented it. This claim was made by a manager at the Kin Jo restaurant.

Other stories point to a chef named Ichiro Mashita in Los Angeles. He worked at a restaurant called Tokyo Kaikan. It is said he used avocado when fatty tuna was hard to find. He might have even started making these rolls in the 1960s.

Another story comes from a chef in Vancouver, Canada. His name is Hidekazu Tojo, and he moved there in 1971. He says he created the inside-out style in the late 1970s. Tojo says the name comes from the initials C.A. These stand for crab and avocado. They also match the initials for the state of California.

Because of his work, he became a goodwill ambassador for Japanese food in 2016.

Even though people disagree on the inventor, the roll's success is real. It became a favorite in Southern California very quickly. By the 1980s, it was popular across the whole United States.
