Some sausages use a mix of these meats. This food is a very popular snack. You can find it at street stands. It is even a favorite food for football fans.

There are many ways to make these sausages. Recipes change depending on the local area. Some places have over 40 different varieties. In Franconia, the sausages can be long and thick. The Coburg variety uses pork and at least 15% beef. It is seasoned with salt, pepper, nutmeg, and lemon zest.

Other types, like the Kulmbach sausage, use very finely ground veal. Each butcher often keeps their exact recipe a secret. This makes every sausage taste special.

Bratwurst has a very long history. The first records from Germany date back to 1313. This was in the city of Nuremberg. Nuremberg is still famous for grilling sausages today. In Thuringia, records from 1404 also mention them.

Different cities have their own special rules. In Nuremberg, the small sausages are protected by law. They are often grilled over a beechwood fire. You might eat six of them on a pewter plate.

Some people eat them with sauerkraut or potato salad. In the Swabian region, people make a red sausage. They cut an X into the ends so it does not split.

Even in Switzerland, you can find them served with rösti.

Bratwurst is also very popular in the United States. Many German immigrants brought the tradition to North America. It is a common sight at summer cookouts. Wisconsin is a place where people love "brats."

In Wisconsin, some people make a "beer brat." They simmer the meat in beer with butter and onions. Bratwurst even became a hit in baseball stadiums in 1954. Today, some cities even hold huge festivals just for bratwurst.
