It is a dish made of meat, noodles, and onion sauce. The name means "five fingers" in Turkic languages. This name comes from the old way of eating with your hands. People in many places call it by different names. In Xinjiang or Uzbekistan, they call it naryn. In Turkmenistan, it is known as dograma. It is a dish that brings people together to share.

Making this meal takes careful work. First, a cook boils meat like lamb or horse. They might use horsemeat sausages called qazı or chuchuk. They also make dough using flour, water, eggs, and salt. This dough rests for 40 minutes before use. A cook rolls it very thin with a rolling pin. Then, they cut the dough into noodles. In places like Naryn, they use a sharp knife called a maki to dice everything.

This food grew from a nomadic way of life. Long ago, people moved with their animals. They relied on meat and dairy for food. This history helped shape the dishes we see today. Two famous books helped turn these traditions into national dishes. One was called "The Book of Tasty and Healthy Food." The other was "National cuisines of our peoples." These books helped record how people eat.

Serving the meat is a very important ritual. This ritual is called ustukan. The host gives different parts of the meat to guests. They do this to show respect to others. For example, the oldest men might get the jambash, which is the thigh bone. The most respected women receive the kuiruk, or the tailbone. Children are given the omurtka, which is the spine. Even the youngest male might receive the bash, or the head.

Eating beshbarmak is a full experience. People often start with a warm mutton broth called shorpo. They drink it from bowls called kese. After the main meal, they might drink ak-serke. This is shorpo mixed with kymyz or ayran. This drink helps settle the stomach. The whole meal is served on large communal platters. This means many people eat from the same plate.
