Many different styles of sauce exist. In East Carolina, the sauce is thin and tart. It uses vinegar, black pepper, and chili flakes. This sauce helps cut through the fat of the meat. In South Carolina, people love a yellow sauce. This sauce uses mustard, vinegar, and sugar.

Other places have different ways to make it. Memphis style uses molasses to make it sweet. Kansas City sauce is thick and reddish-brown. It uses tomato paste and lots of sugar. Most bottled sauces use this style. Texas sauces often use cumin and onion. They are not as sweet as other kinds. In North Alabama, you might find a white sauce. This sauce uses mayo, vinegar, and sugar. It is great on chicken.
