People grill beef, pork, or chicken. Some grills are built into the dining table. Other shops use small, portable stoves.

Many meats use a marinade. A marinade is a sauce used to add flavor. Bulgogi is a very popular beef dish. It uses soy sauce, sugar, and garlic. People often add pear to the sauce. This helps make the meat soft. Galbi is another favorite. It uses beef short ribs. It tastes great when cooked over charcoal.

Some meats do not use a sauce. Samgyeopsal is thick strips of pork belly. It is tender and fatty. Chadolbagi is beef brisket sliced very thin. It cooks very fast on a hot pan.
