For example, the name Prunus dulcis was published in 1967 by David Allardice Webb. However, that name was unavailable because it had been used for a cherry in 1878. Consequently, Prunus amygdalus remains the oldest valid scientific name for the species.
Today, almond production is a massive global industry, with California producing about 80% of the world's supply. This scale requires a massive biological effort every February. Over one million beehives are moved into California orchards for pollination. This represents nearly half of all honeybee colonies in the United States. This is the largest managed pollination event in the world. However, the industry faces challenges from climate change. Persistent droughts and extreme heat in California can make production unsustainable. These environmental stresses have caused some producers to leave the industry, which increases prices. 
There are important biological differences between sweet and bitter varieties. Most commercial almonds are the sweet variety, which are predominantly used in food. This reaction produces glucose, essential oils, and hydrogen cyanide. Because of this, bitter almonds contain much higher levels of cyanide than sweet ones. In fact, bitter almonds can contain 42 times more cyanide than the trace amounts found in sweet almonds. 
Almonds are highly versatile in global cuisine. They are frequently used in desserts, such as the sweet paste known as marzipan. They can be sold to consumers in several different forms. Some are sold unshelled, while others are sold shelled to reveal the seed. A common process is blanching, where almonds are treated with hot water. This softens the outer skin so it can be easily removed. This reveals the white embryo inside. To keep them fresh, cleaned almonds should be stored in a refrigerator. If kept at higher temperatures, they will become rancid more quickly.
