Agricultural chemistry

physical science Maturity 9-11 Next article →

Agricultural chemistry is a specialized scientific field. It combines organic chemistry and biochemistry to study farming. This science focuses on the production, protection, and use of crops and livestock. Researchers study the chemical structures and reactions that affect how plants and animals grow. The primary goal is to increase crop yields. It also aims to improve the overall quality of food and fiber. This field is essential for supporting a growing human population.

One major part of this science is plant biochemistry. This involves studying the chemical reactions that happen inside plants. Scientists look at differences between various plant groups. They compare dicotyledons to monocotyledons and gymnosperms to angiosperms. They also study C2 versus C4-fixers. Understanding these molecular differences helps create new food technologies. By knowing how plants work at a molecular level, we can better provide food for the world.

Protection of crops is another vital mechanism. Scientists develop pesticides to mitigate crop losses. These include herbicides, which kill weeds. They also create insecticides to manage bugs and fungicides to stop fungi. These chemicals help regulate pests and diseases. This allows crops to grow undisturbed by animals or insects. For example, 2,4-D is an early synthetic herbicide. It was inspired by the study of auxins and had a huge impact on yields starting in the 1940s.

However, using pesticides can have negative consequences. These chemicals can cause contamination of ground and water. This can lead to environmental issues like the "dead zone" in the Gulf of Mexico. Pesticides may also be toxic to non-target species. This includes birds, fish, and pollinators. They can even be harmful to the farmworkers themselves. Agricultural and environmental chemistry specifically studies these negative molecular consequences.

Soil chemistry is also a key focus. Scientists aim to preserve or increase soil fertility. They analyze soil to understand its composition. Dry soil consists mostly of inorganic matter, which refers to minerals. It also contains organic matter. This organic matter includes living organisms, their degradation products, and acids like humic and fulvic acids. Fertilizers are a major tool used here. While organic fertilizers are traditional, many modern ones are produced through mining or the Haber-Bosch process.

Common chemical fertilizers include urea and ammonium sulphate. Other examples are diammonium phosphate and calcium ammonium phosphate. These materials have dramatically increased the rate of crop production. This increase helps support the rising number of people on Earth. Beyond food, agricultural chemistry also produces biofuels. Ethanol is obtained through the fermentation of sugars. Biodiesel comes from both animal and plant fats.

Technological advances like biotechnology have changed the field. Biocatalysis uses enzymes to create food products. For instance, the enzyme glucose isomerase is used to make corn-derived glucose into fructose. More than five billion tons of high fructose corn syrup are produced annually this way.

Scientists also use Genetically Modified Organisms, or GMOs. These are living things altered at a genomic level. They can provide vaccines, more nutrients, or even unique plastics. Examples include virus-resistant squash and herbicide-resistant soybeans.

There is much controversy surrounding GMOs. Some people worry about potential antibiotic resistance from eating them. Others worry about long-term effects on the human body. Because they are relatively new, these effects are still studied. In the United States, all foods containing GMOs must be labeled. Since the 1970s, increased market interest has grown the biotechnology infrastructure. This has decreased costs and advanced research. Today, the union of biology and chemistry is more important than ever to feed the world.
