    12–15 minutes after preheating

Use: Sweet potato, first 14.8 mL oil, pinch salt

Place stone in oven and preheat to 205°C. Toss potato with its oil and salt, spread in an ovenproof skillet and roast until cooked but still firm. Remove skillet; now raise oven temperature and follow the stone-heating step.

Ready when: Tender slices that retain their shape.

  2. 02 · Heat stone

    About 45 minutes total

    Use: Pizza stone and oven

Set stone about 20 cm below broiler. Preheat to 274°C (or the oven’s lower maximum), then keep heating the stone 30 minutes more. If both oven and stone permit it, use broil for the final 3–5 minutes, then return to bake before loading.

Ready when: Stone is thoroughly heated; use only equipment-rated settings.

  3. 03 · Stretch cold dough

    A few minutes

    Use: Chilled dough, dusting flour

Flour counter, peel and both faces of the dough. Press the centre while preserving a 2.5 cm rim. Lift at the rim, let gravity stretch, then rotate gently over closed fists to about 30 cm. Patch small tears. Lay on peel and test that it slides.

Ready when: Thin, even centre with a continuous airy rim; no sticking.

  4. 04 · Top

    Immediately before baking

    Use: Listed topping ingredients

Spread the second 14.8 mL portion of oil over dough; arrange sweet potato and pear. Add cheese, cilantro, ginger, optional chopped chiles and black pepper. Test sliding again.

  5. 05 · Bake + finish

About 7–8 minutes at 274°C; longer at 260°C

    Use: Topped pizza

Return oven to bake and slide pizza onto stone. Bake about 5 minutes, then, if allowed, broil 2–3 minutes while watching continuously. If broiling is unavailable, keep baking to the same visual endpoint. Lift to check the bottom.

Recipe

Sweet Potato and Pear Pizza

Start with the prepared, chilled pizza dough and sauce listed below. A pizza paddle, also called a peel, helps slide the pizza onto the hot stone.

Prepare first: Same-day pizza dough

How do I make it?

  1. Roast the sweet potato

    12–15 minutes after preheating

Put the stone in the oven and heat to 205°C. Toss the sweet potato with the first 14.8 mL oil and a pinch of salt, spread it in an ovenproof skillet and roast until cooked but still firm. Take out the skillet, then raise the oven temperature for the next step.

Roast thin sweet potato slices until tender but still holding their shape.

Ready when: Tender slices that retain their shape.

  2. Heat the oven and stone

    About 45 minutes total

Put the pizza stone about 20 cm below the top grill and heat the oven to 274°C, or its lower maximum; once the oven is hot, heat the stone for 30 minutes more. If the stone and oven are both suitable for grilling, turn on the top grill for the last 3–5 minutes, then switch back to bake before adding the pizza.

Heat the stone thoroughly before loading the pizza.

Ready when: Stone is thoroughly heated; use only equipment-rated settings.

  3. Stretch the cold dough

    A few minutes

Flour the counter, the pizza paddle and both sides of the dough; press the middle while leaving a 2.5 cm rim. Lift the dough by its edge so its weight stretches it, then turn it gently over closed fists until about 30 cm across, repairing small tears. Place it on the paddle and check that it slides freely.

Ready when: Thin, even centre with a continuous airy rim; no sticking.

  4. Add the toppings

    Immediately before baking

Spread the second 14.8 mL oil over the dough, then arrange the sweet potato and pear on top. Add cheese, cilantro, ginger, any chopped chiles you are using and black pepper, then check that the pizza slides on the paddle.

Ready when: Even coverage, leaving about 2.5 cm of rim.

  5. Bake the pizza

About 7–8 minutes at 274°C; longer at 260°C

With the oven back on bake, slide the pizza onto the stone and bake for about 5 minutes. If the equipment allows, switch to the top grill for 2–3 minutes and watch constantly; otherwise keep baking until it looks done. Lift an edge to check that the bottom is cooked.
