Troubleshooting

If you see thisLikely causeWhat to do nowNext time
The loaf spreads or is difficult to shape. The dough is warm, insufficiently developed or too heavily floured during handling.Use a scraper and handle gently; keep the stated pan support where specified.Mix the ricotta and chives into the dough from the start, knead until elastic, and use the proofing cue rather than waiting for collapse.
A slice is damp in the middle. The bread was cut warm or was underbaked.Let the remaining bread cool fully; raw sticky dough needs further cooking.Probe the thickest bread centre and allow the full cooling interval before slicing.

Storage: Cool fully, then refrigerate wrapped bread within 2 hours of baking and use within 2 days. Freeze slices for up to 2 months. Toast or warm before serving.; Contains: wheat, milk.; This Nepedia version has not been kitchen-tested.
