Vanillin is the main part that gives vanilla its scent.

It is found in the seed pods of a climbing plant. This plant is a type of orchid.

When the pods are green, they do not smell like vanilla. They hold the vanillin in a different form. This form is called glucovanillin. To get the scent, the pods must go through a curing process. First, workers put the pods in hot water. Next, the pods sit in the sun during the day. At night, they are wrapped in cloth to sweat. This set of steps makes the pods turn dark brown. During this time, the pods release the vanillin.

Natural vanilla is very expensive. Because of this, many people use synthetic vanillin. This is vanillin made in a lab. Most vanillin today comes from chemicals called guaiacol and glyoxylic acid. Some vanillin is also made from lignin. Lignin is a part of wood used to make paper.

Scientists can even use tiny living things to make it. This is called biosynthetic vanillin. It can be labeled as a natural flavoring.
