This sweet treat spread to the Mediterranean and North Africa. Later, Spanish and Portuguese sailors brought it to the Americas.

Growing sugar changed history. In the 18th century, many people were forced to work on plantations. Some were brought as slaves. Later, many people from India and China moved to work under contracts called indenture. These moves helped many ethnic groups settle in new lands.

Growing sugarcane involves many important steps and factors. Farmers must look at the soil and the weather. They also must choose the right kind of plant to grow. The stalks grow from shoots that come out of the base. These stems grow to be about 3 to 4 meters tall.

The physical structure of the plant is quite complex. Growth begins with lateral shoots emerging from the base of the plant. These shoots develop into multiple stems that typically reach heights of 3 to 4 meters.

These stems eventually become the cane stalks, which make up roughly 75% of the total plant mass. A mature stalk is mostly water, containing between 63% and 73% moisture. The remaining solid matter consists of 11% to 16% fiber, 12% to 16% soluble sugars, and 2% to 3% non-sugar carbohydrates.

Cultivating sugarcane successfully requires managing many different variables. Farmers must balance climatic conditions with specific soil properties. The choice of variety is also critical because the sugarcane genome is exceptionally complex. This complexity is caused by interspecific hybridization and polyploidization, where plants have multiple sets of chromosomes.

Yields can vary wildly based on management techniques. While the average annual production is 60 to 70 tonnes per hectare, yields can range from as low as 30 to as high as 180 tonnes per hectare.

The second center is southern China and Taiwan, involving *Saccharum sinense. Austronesian sailors played a massive role in spreading the crop. The rise of large-scale sugarcane plantations had profound and often tragic human consequences. In the 18th century, the demand for labor drove the Atlantic slave trade. Many people were forcibly imported as slaves to work the plantations under brutal conditions.
