Many people love it because it is hearty and filling. It is a classic comfort food found in many different homes. Some people even make special versions that are vegetarian or vegan. These versions use substitutes instead of meat or dairy.

Making a basic pie follows a few simple steps. First, you fry onions until they are soft. Then, you add meat to the pan to cook it through. You add herbs and stock and let the mixture simmer. Meanwhile, you boil and mash the potatoes for the top layer.

You put the meat in an ovenproof dish and cover it with the potatoes. Finally, you bake the whole dish in the oven.

This dish has a long and interesting history. The term "cottage pie" was first recorded in 1791. A man named Parson Woodforde wrote about "Cottage-Pye" in his diary that year. In 1806, Maria Rundell published a recipe for a dish called "Sanders." It used minced beef or mutton with onion and gravy. This Sanders dish was topped with mashed potato and baked in individual servings.

Some people also called these pies "Saunders."

There are many different names and ways to eat this food. In Britain, many shops call beef pies "cottage pies" and lamb pies "shepherd's pies." However, in the US, Canada, and Australia, "shepherd's pie" is a common name for any meat under potatoes. In France, a similar dish is called Hachis Parmentier. It is named after Antoine-Augustin Parmentier, who helped make potatoes popular in France.

Some recipes even use different meats like veal, pork, or chicken.

Many other cultures have their own versions of this meal. In Canada, a dish called Pâté chinois uses beef and creamed sweetcorn. In Brazil, a dish called Escondidinho uses manioc purée to hide the meat. Portugal has a dish called Empadão that uses meat and mashed potatoes. Even in Indonesia, there is a version called Pastel tutup.
