Shellfish

life science Maturity 5-7 Next article →

Shellfish are a diverse group of aquatic invertebrates that possess an exoskeleton. An exoskeleton is a hard outer shell that protects the animal's body. While many people use the term informally to describe seafood, it covers several distinct biological groups. These animals live in many environments. Most are found in saltwater, but some live in freshwater. A few species, like certain land crabs in the Caribbean, even live on land.

Biologically, shellfish are not actually fish. In modern science, the term "finfish" describes animals that have a backbone, or vertebrae. Shellfish are invertebrates, meaning they lack a backbone. Most shellfish occupy a low position on the food chain. They primarily eat a diet of phytoplankton and zooplankton. These are tiny organisms that float in the water.

Scientists categorize shellfish into three main groups. The first group is molluscs. This group includes bivalves like clams and oysters, cephalopods like squids and octopuses, and gastropods like snails. The second group is crustaceans. These animals belong to the phylum Arthropoda. They are actually closely related to insects and arachnids. Common examples include shrimp, lobsters, and crabs.

The third group is echinoderms. These include sea urchins, though they are harvested for food less often than other groups. In many places, sea urchin gonads are considered a popular delicacy.

Humans have consumed shellfish for hundreds of thousands of years. Archaeological finds prove this long history of use. Today, shellfish are essential to almost every global cuisine. In Japan, shellfish are central to sushi and sashimi. These dishes often feature fresh, raw seafood. In the United States, the Northeast is famous for lobster. The American lobster ranges from Newfoundland down to the Carolinas. In the Gulf states, shrimping is a massive industry. Many traditional Cajun and Creole recipes, such as jambalaya, rely on shrimp and prawns.

Shellfish provide vital ecosystem services that benefit the entire planet. Many species, such as mussels and oysters, grow together to form reefs. These reefs create habitats for many other marine species. They also help bury carbon, which can help mitigate climate change. Reefs act as natural defenses by protecting shores from erosion, floods, and waves. Additionally, many shellfish are filter feeders. They pull suspended particles and contaminants out of the water. This process improves water clarity and helps seagrasses grow.

However, eating shellfish carries certain risks. Approximately 1% of the population suffers from a shellfish allergy. This can cause serious symptoms like hives or anaphylaxis. Some people experience intolerance instead, which causes gastrointestinal distress like nausea or cramps. Some shellfish also contain natural toxins. For example, whelks can contain arsenic. In Alaska, shellfish can cause paralytic shellfish poisoning (PSP). This is caused by saxitoxin, a poison released by dinoflagellates. This toxin is 1,000 times more potent than cyanide and can paralyze breathing muscles.

Cultural and religious views also shape how shellfish are consumed. The Torah forbids eating shellfish, so observant Jews do not eat them. Seventh-day Adventists follow similar dietary laws. Among Muslims, views vary. Sunni Muslims generally view most shellfish as halal, which means permitted. Shia Islamic schools of thought have varying rules on which types are acceptable. Despite these different rules, shellfish remain a global staple of human nutrition.
