The elder is a group of flowering plants known as Sambucus. There are between 20 and 30 different species in this group.

Most elders grow as fast shrubs or small trees. Some species can even grow as tall herbaceous plants. Their leaves are long and have jagged edges called serrated margins. In late spring or early summer, they grow large clusters of small white or cream flowers. These flowers later turn into clusters of small berries. These berries can be black, blue-black, or red.

Some berries might even be yellow or white.

Many things happen to help these plants grow and thrive. Elders like to grow in sunny places. They are nitrogen-tolerant, which means they can grow well near organic waste.

In Britain, people often plant them to make hedges. They grow very fast and can be bent into shape easily. This makes them a great choice for an "instant hedge." The plants can grow in almost any soil as long as they have enough sunlight. They live in many temperate and subtropical regions around the world.

Scientists have studied these plants for a long time. A famous scientist named Carl Linnaeus originally described the genus. The name Sambucus comes from an ancient Greek word for a wind instrument. This is because people used to remove the pith from the twigs to make whistles.

The plant family was once thought to be the honeysuckle family. Now, scientists place it in the Adoxaceae family. This change happened because of comparisons of their genes and shapes. There are many accepted species, like Sambucus nigra and Sambucus canadensis.

Nature uses the elder in many interesting ways. Many birds and mammals eat the berries for food. In Northern California, migrating band-tailed pigeons eat them.

Some moths, like the emperor moth, use the plants as food for their larvae. In Europe, tiny insects called flower thrips visit the strong-scented flowers. This helps move pollen between the flowers. Some beetles also live around the red or blue elderberry bushes. Females often lay their eggs on the bark of the plant.

People use elders for food, color, and even medicine. The cooked berries of most species are safe to eat.

The berries are full of vitamin C and other nutrients. They also have anthocyanidins, which are pigments that make the juice a dark purple color. This juice is used as a natural color in food. Some people use elderberry as a supplement for colds or the flu. However, you must be careful with raw plants. Some species have cyanogenic glycosides, which can make you feel sick. Always make sure the berries are cooked to stay safe.
