Humans have three main pairs of large glands. The parotid glands are the largest. They sit near your ears. They make a thin liquid. This liquid has an enzyme called alpha-amylase. This enzyme breaks down starch in food. The submandibular glands are under your jaw. They make about 70% of your saliva. This liquid is a mix of thin fluid and thick mucus. The sublingual glands are under your tongue. They make mostly thick mucus. This helps things slide easily.

You also have hundreds of tiny minor glands. They are spread all over your mouth. They make a thin coat of saliva. This keeps your mouth wet. Every day, you make 1200 to 1500 milliliters of saliva. This is a lot of liquid! Saliva also fights germs. It has proteins that can break down bacteria. This keeps your mouth safe and clean.
