Organic acids are special compounds found all over the living world. They are part of plants, animals, and even human bodies. You can find them in human blood and urine.

These acids come in many different types. Carboxylic acids are the most common kind. They have a special group called a carboxyl group. Sulfonic acids are also found in nature. These are relatively stronger than other organic acids. Some other groups, like the thiol group, can also make an acid.

Most organic acids are considered weak acids. This means they do not break apart completely when they are in water. Some organic acids are very small. Formic acid and lactic acid are good examples. These small acids mix very well with water. Other organic acids have a higher molecular mass. Benzoic acid is one example of this. These larger acids do not mix well with water. However, most organic acids do mix well with organic solvents.

Scientists and workers use these acids for many important jobs. Some acids, like citric and oxalic acid, are used to remove rust. They can dissolve iron oxides. They do this without damaging the metal underneath. This is better than using strong mineral acids. Other acids are used in the oil and gas industry. Formic acid and acetic acid are used for well stimulation. They are safer for metal pipes. This is because they are less reactive with metals than hydrochloric acid.

Organic acids also help keep our food safe to eat. They act as antimicrobials to stop bacteria from growing. They can enter the cell walls of certain bacteria. This happens to germs like Salmonella and E. coli. Once inside, the acids change the internal environment of the germ. This makes it very hard for the bacteria to survive. Lactic acid and its salts are used often in dairy products. They are also used in meats like ham and sausages.

Farmers also use organic acids to help animals stay healthy. People have used them in pig production for over 25 years. They are also helpful for poultry like chickens. Adding these acids to feed can improve how animals grow. They can help prevent infections like E. coli in young pigs. They can also reduce the presence of Salmonella. Scientists are even testing acids like propionic acid to protect wood. They want to see if it can stop fungi from decaying wood.
