Nitrite

physical science Maturity 11-13 Next article →

Nitrite is a tiny but very important part of our world. It is a chemical form of nitrogen that moves through nature. This movement is called the nitrogen cycle.

In nature, living things like bacteria help this happen. Some bacteria turn ammonium into nitrite. Other bacteria turn nitrite into nitrate. This cycle keeps the Earth's systems working. Nitrite is also used in many big industries. It is used to make medicines and colorful dyes.

To understand nitrite, we can look at its shape. The nitrite ion is made of one nitrogen atom and two oxygen atoms.

It has a symmetrical shape with a bond angle of about 115 degrees. The two bonds between the atoms are the same length. Because the negative charge is spread out, it is called a resonance hybrid. The atoms also have a lone pair of electrons. This makes the nitrite ion a Lewis base. In a gas, it usually stays in a flat shape.

People have used nitrite for a very long time. In the United States, it has been used formally since 1925. However, some experts believe people used it for meat starting in the Middle Ages. Today, it is very common in food processing. In the U.S., meat cannot be labeled as "cured" without adding nitrite. Some makers of Parma ham have avoided it since 1993. They do this because the meat is made in a very clean way. This shows how different people use science in different ways.

Nitrite does many jobs in the kitchen and the lab. In foods like ham, bacon, and sausages, it helps the meat turn a pretty pink color. It does this by reacting with a part of the meat called myoglobin. This helps the meat look fresh when you cook it. It can also help stop the growth of a germ called Clostridium botulinum. In a lab, scientists use a special test called the Griess Reaction to find nitrite. This test turns a sample a deep red color. This makes it easy to see how much is there.

Nitrite can also be a hero in an emergency. It is used in kits to treat people who have swallowed cyanide. Cyanide is a very dangerous poison. When someone takes it, nitrite helps by creating something called methemoglobin.

This substance grabs the cyanide so it cannot hurt the body. It can also release nitric oxide to help. However, we must be careful with nitrite. Taking too much can cause a blood sickness. It is important to use it only when it is helpful.
