These ray-finned fish live all over the world. You can find them in warm tropical waters and cool temperate coasts. Some species even live in fresh water. There are about 78 different species in this large family. They belong to a group called Mugiliformes. This group is named after the fish themselves.

You can recognize a mullet by looking at its body. They have two separate fins on their backs. Their mouths are small and shaped like triangles.

Most mullets do not have a lateral line organ. This is a special sense organ found on many other fish. Mullets eat bits of food called detritus from the bottom. To help with this, they have very muscular stomachs. They also have a complex pharynx, which is a part of the throat, to help them digest food.

People have enjoyed eating mullet for many centuries. In ancient Egypt, people ate a dried or pickled fish called fesikh. People in Mediterranean Europe have eaten them since the time of the Romans. In North America, indigenous groups in Florida, Hawaii, and North Carolina fished for them. This happened as far back as the 15th century. Scientists have even found very old fossils of these fish. The oldest known fossil is named Mugil princeps from France. It comes from a place called the Aix-en-Provence Formation.

Mullets are famous for jumping out of the water. They usually do two different kinds of leaps. One leap is a straight and clean slice to escape predators. The other is a slower, lower jump that makes a big splash. Some people think this low jump helps them breathe. They might be trying to get oxygen-rich air for a small organ above their pharynx.

Scientists study how young mullet grow to learn more about them. A study in 2021 looked closely at how they develop.

It is easy to get mullet names mixed up. In North America, the name usually means the Mugilidae family. In Europe, people often add a word to be specific. They might call them grey mullets or red mullets. Red mullets are actually in a different family called Mullidae. Outside of Europe, people often call those fish goatfish. In the 1800s, some American fishers called mullet "trash fish." They thought they had low value. In the 1960s, Florida officials tried to make them popular again. They even tried a campaign to rename them "lisa."
