Lemon tart

language culture Maturity 7-9 Next article →

A lemon tart is a sweet dessert from France. It is a type of tart. A tart has a pastry shell. Inside, it has a lemon filling. This filling is smooth and tasty.

In the United Kingdom, the tart uses a lemon custard. This custard is made with eggs, sugar, cream, and lemon juice. Chefs often bake the pastry shell first. This is called blind-baking. Then, they add the custard. Some people dust the top with icing sugar. Other chefs cook the filling in a pan first.

In France, chefs make a special crust. It is called pâte sucrée, which means sweet shortcrust pastry. This makes the tart look very elegant. Some people think it must have a white foam top. This foam is called meringue. However, the classic French tart does not use meringue. You can find both kinds in shops today.

There are other lemon treats too. A Shaker lemon pie is very similar. It has a bottom crust and lemon custard. A lemon meringue pie is different. It has no top crust. Instead, it has a thick layer of meringue on top.
