A juicer, often called a juice extractor, is a specialized tool for food preparation.

Its primary purpose is to extract liquid from fruits, herbs, leafy greens, and various vegetables. The machine achieves this through several mechanical methods. It may crush, grind, or squeeze the ingredients to release their fluids. This process is known as juicing. A key difference exists between a juicer and a blender. A blender mixes liquids and solids into one drink. In contrast, a juicer uses a screening mesh to clarify the liquid. This mesh removes the solid pulp from the final juice.

Different machines use different mechanical processes to separate juice from pulp.

One common type is the reamer, which is used for citrus fruits. People use reamers for lemons, limes, oranges, and grapefruits. The user presses or grinds a halved fruit against a ridged, conical center. The juice is extracted while the rind is discarded. Some reamers are manual and require the user to press and turn the fruit. Other models are electrical. These electrical versions automatically turn the ridged center when the fruit is pressed upon.

Centrifugal juicers represent another major category of extraction technology.

This machine uses a flat cutting blade to chop the produce. After cutting, the machine spins the produce at a very high speed. This rapid spinning motion uses centrifugal force to separate the juice from the pulp. Most models are designed to collect the pulp in a different part of the machine. This allows the liquid to flow freely through a mesh screen. This method is fast and relies on high-speed rotation rather than steady pressure.

Other machines use slower, more controlled methods to extract liquid. Masticating juicers are often called cold press juicers or slow juicers.

Instead of fast blades, these machines use a single auger. An auger is a large, screw-like part that compacts and crushes the produce. The machine breaks the ingredients into smaller sections before squeezing them. The juice is forced along a static screen. Meanwhile, the solid pulp is expelled through a separate outlet. Triturating juicers, also known as twin gear juicers, use a similar but more intense method. They utilize two augers to crush and press the produce.

Some juicers are highly versatile and can act as food processors. Many twin gear and horizontal masticating juicers include various attachments. These parts allow the machine to perform tasks beyond simple juicing. For example, they can crush herbs and spices or make nut milk. Some models can extrude pasta, noodles, or bread sticks. They can also be used to make nut butter, grind coffee, or prepare baby food. This multifunctionality makes them useful tools in many different types of kitchens.

On a much larger scale, agricultural production uses juicing presses.

These presses are used for large batches of fruit, such as apples. They can be stationary or mobile. A mobile press is useful because it can move between different orchards. The process often involves a stack of apple mash wrapped in a fine mesh cloth. The machine then applies massive pressure to the stack. In some cases, these presses use approximately 40 tonnes of force. These machines are very popular in Europe and have been introduced to North America.

Finally, there is the steam juice extractor, which works without mechanical moving parts.

Karottensaft

This is typically a stovetop device consisting of a pot. The pot generates steam to heat a batch of fruit, such as berries. The fruit is placed in a perforated pot stacked above a juice collecting container. The steam heats the fruit, which then releases its liquid. This method produces remarkably clear juice. Because the steam heats the liquid, the process also pasteurizes the juice. This makes the juice suitable for long-term storage.
