Learning to be a sushi chef requires many years of intense training. Jiro Ono began his journey at a very young age. He started working at a local restaurant when he was only seven years old. Later, he moved to the large city of Tokyo to study as an apprentice. This period of apprenticeship is essential for learning the complex techniques of the craft. He eventually became a fully qualified sushi chef in 1951. After years of preparation, he opened his own restaurant, Sukiyabashi Jiro, in 1965.

The restaurant has become a destination for many world leaders. Japanese Prime Minister Shinzo Abe has dined at Sukiyabashi Jiro. In April 2014, United States President Barack Obama also visited the restaurant. Obama shared a very high compliment about the meal. He noted that he was born in Hawaii and had eaten a lot of sushi there. Despite that experience, he stated that this was the best sushi he had ever had in his life.

Sushi making is a craft that can be passed down through families. Jiro Ono has two sons, Yoshikazu and Takashi Ono. Both of his sons have followed in his footsteps to become sushi chefs. Takashi is the younger son and manages his own restaurant. His restaurant has earned a Michelin star, which is a prestigious honor in the culinary world. Yoshikazu is also a chef and has taken on a larger role at the family business.

As time passes, the management of the restaurant has changed. By the year 2023, Jiro Ono began to step away from day-to-day management. He made this change due to issues with his health. Because of this, Yoshikazu now primarily runs the operations at Sukiyabashi Jiro. Even with these changes, Jiro's connection to his work remains very strong. On October 27, 2025, Jiro Ono reached the milestone of turning 100 years old.

Jiro's passion for his craft is evident in his personal wishes. Just one month before his 100th birthday, he spoke on Respect for the Aged Day. During this time, he expressed that he still wants to continue working and making sushi. This dedication to his art has been documented for others to see. In 2011, filmmaker David Gelb released a documentary titled Jiro Dreams of Sushi. This film helped share the story of his life and his pursuit of perfection.

While the Ono family celebrates their craft, they also face modern challenges. They hold concerns regarding the future of the ingredients they use. Specifically, the family fears that overfishing could impact the ocean. If overfishing continues, key ingredients used in traditional sushi might disappear. This threat to the environment could change the way traditional sushi is prepared in the future. Protecting these resources is important for keeping the tradition alive for new generations.
