In the field of optics, Biot focused on the polarization of light. Before the 19th century, many scientists believed light consisted of tiny particles called corpuscles. He showed that the rotation could be clockwise or counterclockwise depending on the material's optical axis. Biot's scientific curiosity even led him into the sky. In July 1804, he joined Joseph Louis Gay-Lussac for a scientific hot-air balloon flight. They traveled to a height of 4,000 metres to measure how the Earth's magnetic field changes with elevation. Later that year, Gay-Lussac performed a solo flight reaching 7,010 metres. These early experiments were essential for understanding atmospheric and magnetic variations. Biot's ability to combine different disciplines, like mathematics and physics, allowed for these complex measurements.

Throughout his life, Biot received numerous prestigious honors. He was elected to the French Academy of Sciences in 1803. He also gained international recognition as a member of the Royal Society of London and the Royal Swedish Academy of Sciences. In 1840, the Royal Society awarded him the Rumford Medal for his work on the thermal or optical properties of matter. He was also highly decorated by the French government, becoming a commander in the Legion of Honour by 1849. Additionally, Biot's work in chemistry included discovering the physical properties of cream of tartar in 1832. He even spent his final years helping to publish his son Édouard's work on Chinese classics. Jean-Baptiste Biot died in Paris on 3 February 1862, leaving behind a vast scientific legacy.
