Hyssop is a brightly colored shrub. It belongs to the mint family. This plant grows in warm places. It likes full sun and sandy soil.

Hyssop has dark green leaves. In the summer, it grows fragrant flowers. These flowers can be pink or blue. Some are even white. The flowers have a strong minty smell.

People have used hyssop for a very long time. In old stories, it was used for cleaning. Some people think it was used in the Bible. It might have been a different herb like Syrian oregano.

Today, cooks use hyssop in many ways. They use the leaves in food. Some people use it to make liqueur. Bees also love the flowers. They make sweet honey from the nectar.

To use the herb, people must dry it first. They cut the flowering tips. Then, they hang them in a cool place. The drying takes about six days. The dried plant is much lighter than the fresh one. It can stay good for 18 months.
