There are more than 70 different species in this group. Most of them grow as shrubs, but some can be small trees. Some even grow as climbing plants called lianas. You can find them in Asia and the Americas. Many of them come from eastern Asia, especially China, Korea, and Japan. They are very popular in gardens because their flowers are so big and bright.

These plants have a very interesting way of growing flowers.

The flowers grow in large groups called flowerheads. These heads are often found at the ends of the stems. Most flowerheads have two different types of flowers inside them. There are small, plain flowers in the very center. Around the outside, there are large, colorful flowers called sterile flowers. These outer flowers have big, showy parts called sepals or tepals. Some flowerheads look like round pom-poms, which people call mopheads. Others are flat and look like lace, so they are called lacecaps.

One of the most amazing things about hydrangeas is their color.

The flowers can change color based on the soil. This happens because of the soil's pH, which measures how acidic or alkaline it is. When the soil is acidic, with a pH of 5.5 or lower, the flowers turn blue. If the pH is between 5.5 and 6.5, the flowers can look purple. When the soil is alkaline, with a pH of 6.5 or higher, the flowers turn pink. This color change happens because of aluminum in the soil. White hydrangeas do not change color because they do not make the pigment needed for color.

People have studied these plants for a very long time.

The name hydrangea comes from a Greek word meaning "water vessel." This name describes the shape of their seed capsules. Some people used to call them hortensia. This name likely comes from the Latin word for garden. We even have fossils of ancient hydrangeas from long ago. Scientists found fossils of a species called Hydrangea knowltoni in Alaska. They also found seeds of a plant called Hydrangea polonica in Poland.

Hydrangeas are connected to many different parts of human life. In Japan, people use leaves from the Hydrangea serrata plant to make a sweet tea. This tea is used in a special ceremony called kan-butsu-e to celebrate Buddha's birthday. In Korea, people make a similar herbal tea. Some people also use hydrangeas for medicine, though all parts of the plant are moderately toxic if eaten. In the United States, the Hydrangea quercifolia is the official state wildflower of Alabama. These plants bring color to gardens and history to many cultures.
