Green curry

language culture Maturity 11-13 Next article →

Green curry is a famous dish from central Thailand. It gets its color from green chilies. The Thai name means "sweet-green curry." This does not mean it tastes sweet. It refers to the soft green color. The color looks creamy and mild.

To make the paste, people pound many things. They use a mortar to crush ingredients. They use green chilies and shallots. They also use garlic and lemongrass. Other parts include lime peel and salt. Some add shrimp paste and seeds.

Cooking the curry is a special way. First, fry the paste in coconut milk. This lets out the good smells. Then, add more coconut milk. People add meat, fish, or fish balls. They may add palm sugar and fish sauce. Some people add Thai eggplant or basil.

You can serve this meal with rice. Some people eat it with round noodles. We call these noodles khanom jeen. It is a meal that people love to share.
