This method is highly valued because it produces unique textures and flavors. Frying is fundamentally a dehydration process. It relies on the transfer of both mass and heat between the fat and the food. This process causes several important chemical changes. These include protein denaturation, which changes the structure of proteins. It also involves starch gelatinization and rapid water evaporation. As the water leaves the food, the surface undergoes browning. This results in the characteristic crispness that many people enjoy.

To understand how frying works, we must look at the properties of fats. Unlike water, fats can reach temperatures much higher than 100 °C (212 °F) before they boil. This high heat capacity allows for very rapid cooking. The fat also transfers heat efficiently into the food. During this process, the fat may penetrate the food to varying degrees. This adds richness, calories, and lubricity to the item. It can also contribute its own specific flavor. The heat can even sear or carbonize the surface of the food. It can also cause the caramelization of sugars, which adds sweetness and color.

There are several distinct techniques used depending on the amount of fat required. Sautéing, stir-frying, and pan-frying all use a thin layer of fat on a hot surface. A frying pan, a griddle, a wok, or a sautee can be used for these methods. Sautéed foods are often tossed in the pan during cooking. In contrast, pan-fried foods are generally turned over once or twice using tongs or a spatula. Stir-frying is a specific type of high-heat cooking. It requires the food to be stirred continuously. This constant movement prevents the food from adhering to the surface or burning.

Other methods involve larger amounts of fat. Shallow frying is a form of pan frying. It uses enough fat to immerse approximately one-third to one-half of each piece of food. Usually, the fat used in shallow frying is only used once. Deep frying is a much more involved process. It involves totally immersing the food in hot oil. This oil is typically topped up and used several times before it is disposed of. Deep frying may require specialized oils to achieve the best results.

Frying has a very long history in human culture. It is believed to have first appeared in Ancient Egyptian kitchens. This occurred during the Old Kingdom, around 2500 BC. During the Middle Ages, fried food became a common delicacy for wealthy people. They often enjoyed fried meats and vegetables. It is believed that frying was originally created as a way to preserve food. Today, deep frying has grown into a massive worldwide industry. Because the process is quick, it can be made continuous for mass production. This allows products to emerge sterile and dry. This results in a relatively long shelf life for packaged goods. Examples include potato chips, French fries, nuts, doughnuts, and instant noodles.

While frying is popular, researchers have studied its impact on health. A 2021 meta-analysis examined the risks associated with high fried food consumption. Compared to low intake, the highest category of consumption was linked to a 3% increase in all-cause mortality risk. It was also linked to a 2% increase in cardiovascular mortality risk. Those who ate the most fried food showed a 37% increased risk of heart failure. They also faced a 28% increased risk of major cardiovascular events and a 22% increased risk of coronary heart disease. The study suggested a linear dose-response relation between consumption and cardiovascular disease. Researchers theorized that high trans fat, high calorie content, and pro-inflammatory nature are main reasons.

Other studies have found additional health connections. A 2023 meta-analysis found that fried food consumption is linked to a 52% increase in the risk of stomach cancer. Eating fried foods is also associated with obesity, hypertension, and prehypertension. Additionally, some fried foods are described as hyperpalatable. This means they are so crisp and tasty that they might entice people to engage in routine overeating. Understanding these connections helps us see how a common cooking method relates to both culinary joy and biological health.
