People often use the nicknames "frogurt" or "froyo" to describe it. While it shares many basic ingredients with ice cream, it is unique because it contains live bacterial cultures. This inclusion of bacteria gives the dessert a tart flavor. This tanginess is caused by the presence of lactic acid in the yogurt. Because makers often use milk instead of heavy cream, frozen yogurt is usually lower in fat than ice cream. It is also distinct from ice milk and conventional soft serve.

The production of frozen yogurt follows a very specific sequence of steps. First, manufacturers combine milk products with stabilizing agents. They then perform a process called homogenization to blend the mixture thoroughly. After this, the yogurt culture is added to the mix. This culture commonly includes two specific types of bacteria: Lactobacillus bulgaricus and Streptococcus thermophilus. The mixture must stay at a specific temperature until it sets. Once it is ready, the mix is cooled to a certain temperature. It then sits in aging tanks for a period of up to four hours.

After the aging process, the ingredients are further refined. Makers mix in sweeteners, flavorings, and various colorings. The mixture is then cooled again to a temperature between -6 and -12 degrees Celsius. To ensure the texture is smooth, air is incorporated while the mixture is agitated. This step is vital for creating extra volume. Finally, the yogurt is frozen rapidly. Rapid freezing is important because it prevents the formation of large ice crystals. Once frozen, the product is stored in a cold environment for shipping.

Several key ingredients determine the final texture and taste of the dessert. Sugar, sourced from either beets or cane, makes up 15% to 17% of the ingredients. This sugar adds sweetness and increases the volume of the solid ingredients. Milk solids account for 8% to 14% of the total volume. These solids provide lactose for sweetness and proteins to help the yogurt resist melting. Milk fat levels usually range from 0.55% to 6%. The amount of fat added is inversely proportional to the amount of milk solids used. This balance helps provide richness to the final product.

Stabilizers are also used to maintain a consistent quality. These include gelatin or vegetable additives such as guar gum and carrageenan. These substances help reduce crystallization within the dessert. They also increase the temperature at which the yogurt will melt. This stabilization ensures the yogurt stays smooth even if the temperature changes during handling.

In large factories, companies often use dedicated assembly lines to manage these complex production stages.

The history of frozen yogurt began in the 1970s. It was invented in the New England region of the United States. Since its creation, different companies have changed how consumers interact with the dessert. The frozen dessert chain Pinkberry is credited with a major shift in how the treat is eaten. They allowed customers to customize their frozen yogurt with various toppings. Another chain, 16 Handles, introduced a different way to serve it. They implemented multi-choice self-service machines that allow for more variety.

Today, frozen yogurt is available in many different styles and forms. Some companies produce a very tart version that stays close to the original recipe. Other companies focus on making a version that tastes more like ice cream. You can find sugar-free and fat-free alternatives to suit different dietary needs. The dessert can be served in a soft-serve style using a specialized freezer. The mix can be purchased as a liquid ready for a machine or as a powder that requires water. When using soft-serve machines, the amount of air introduced is variable. A higher fat level allows the yogurt to absorb more air. This extra air makes the final product taste creamier.
