He led the kitchen at a restaurant called elBulli. He wanted to surprise and delight the people who ate there. He called his style deconstructed cuisine. This means he takes a well-known dish and changes it. He might change its shape, its feel, or its heat. The food looks very different, but it still tastes like the original dish.

One thing he is known for is culinary foam. These are light, bubbly textures made from flavored liquids. He uses special tools to make them. He can even turn almonds into cheese or asparagus into bread.

Some people think his work is a new kind of art. An art group once invited him to show his work. He felt like a cook, not an artist. But they said his new ways of cooking were as hard as painting. He won first place in a top restaurant list five times. He also wrote many cookbooks to share his ideas. He even taught a science and cooking course at Harvard University. Today, his work lives on through a museum called elBulli1846.
