That nice scent often comes from esters. An ester is a special kind of compound. It is made when an acid and an alcohol join together. This set of steps is called esterification.

During this change, a part of the acid is replaced by a part of the alcohol. This makes the ester.

Esters are found almost everywhere in nature. They give smells to apples, pears, and strawberries. Some esters are called lactones. These are ring-shaped esters that help fruits smell good.

Many fats and vegetable oils are also made of esters. These are called glycerides.

Humans use esters for many jobs. We use them to make perfumes and scents. Some esters are used to make plastics like polyester. Other esters are used as lubricants to help machines move. Even our DNA uses esters to build its backbone.
