People love eating them at dim sum restaurants. You can also find them in bakeries. Many people enjoy them in Hong Kong-style cafes called cha chaan tengs. These treats are a special part of Cantonese food culture.

Making these tarts involves two main parts. First, a chef makes the outer pastry shell. This shell can be a shortbread-type crust. It can also be a flaky puff pastry. This puff pastry might use butter, lard, or vegetable shortening. Next, the chef adds the egg custard filling. Some chefs even add flavors like chocolate or green tea. Some special versions even use bird's nest.

These tarts began in the early 20th century. They started in Guangzhou in the Guangdong province. Chefs there were inspired by English custard tarts. Guangzhou was a port for European traders. This helped many new ideas enter the local food scene. At Western-style department stores, chefs made new items to attract customers. They even listed egg tarts as a "Weekly Special."

There are two main ways to make them today. One style comes from Guangzhou's Zhen Guang Restaurant. This style appeared around 1927. The other style comes from Macau. Macau was a Portuguese colony at that time. This version is based on a Portuguese tart called pastel de nata.

In 1989, Andrew Stow and Margaret Wong opened Lord Stow's Bakery. They sold these Portuguese-style tarts in Coloane. In 1999, the recipe was sold to KFC. This helped the Macau style spread to Singapore and Taiwan.

Egg tarts connect different cultures through food. The Hong Kong style is a Chinese version of an English tart. The Macau style is a version of a Portuguese tart. In Hong Kong, these tarts became popular with workers in the 1960s. These tarts are often small and served in groups. Making them is a very important skill. In June 2014, Hong Kong added egg tart making to its heritage list.
