Egg substitutes

language culture Maturity 5-7 Next article →

Egg substitutes are special foods used in cooking and baking. People use them to replace real eggs for many different reasons. Some people have an allergy to eggs and must stay safe. Others follow a vegan or vegetarian diet and avoid animal products.

Some people also care about how animals are treated on farms. Others worry about tiny germs like Salmonella that can be in raw eggs. Because some labels are hard to understand, many people choose these substitutes to feel sure about their food.

There are many ways to make these substitutes work in a kitchen.

Some products are made using science to copy an egg. For example, a company called THE EVERY Company uses fermentation to make egg whites. Another company, JUST, Inc., uses protein from the yellow pea to make things like cookie dough. Some products use micro-algae and tiny living things like yeast to create egg whites. There are even liquid products like The Vegg that use nutritional yeast and kala namak to act like a yellow egg yolk.

Many people enjoy making their own substitutes at home using simple items.

You can use aquafaba, which is the liquid left over from cooking or canning chickpeas. This liquid is great because it can be whipped into a fluffy foam. It helps cooks make treats like macarons or lemon meringue pie. Tofu is another common choice for making egg-like dishes. Silken tofu works well for fluffy omelettes, while regular tofu can add a meaty texture to quiches or custards.

Different ingredients do different jobs depending on what you are making.

If you are baking sweet desserts, you can use fruit purées. One large egg can be replaced by banana, applesauce, or canned pumpkin. These fruits add moisture and help hold the food together. You can also use ground seeds like flax or chia to help thicken a dish. If you want to keep a recipe looking bright, try using white chia seeds instead of dark ones. Chickpea flour mixed with water can also replace one egg and adds vitamins like iron and calcium.

Using substitutes lets people enjoy many of the same foods everyone else eats.

You can still have creamy custards, fluffy omelettes, or sweet cakes. Even though some ingredients like chickpea flour might taste strange before they are cooked, they work well in the oven. Using these different tools shows how many ways there are to prepare a meal. Whether using store-bought products or things from your pantry, you can still find a way to bake and cook with joy.
